"We happened to fall madly in love!"

Chocolate is a passion and as such it can be resisted for a while, but then ...

Giving in to my personal passion for chocolate, the authentic, natural and delicious one, I went to visit my friends from “Audere” at their headquarters in San Maurizio d'Opaglio. I chatted with Diego for half an hour and I would have taken the whole production home.

“Riccardo and I have been friends for a lifetime. We share a passion for food and in particular for chocolate. We wanted to open something of our own. We started researching the world of chocolate to try to understand how it works and why, in some ways, it no longer works. So we discovered that now the chocolate sold in large-scale distribution is no longer "real" chocolate, while if we talk about artisan chocolate we go back to the old recipes and the very few ingredients that make up chocolate: cocoa, cocoa butter and sugar.





We opened in 2014 starting from raw materials of the highest quality. Going to look for them in their places of origin,to know the producers and understand if we could start a working relationship with them. Then we moved from chocolate to spreads and to integrate our chocolate with local products to create something unique. So we established relationships with Slow Food and here was born “the extra dark chocolate bar with Cureggio and Fontaneto Onion. Which, after many years, is still our workhorse. We love our territory and we are convinced that synergies are the future. We looked around and realized that we live in a land that is generous with products that have no equal. The brand "Audere, the chocolate" was joined by "Audere Liquid" and "Audere Materia". Under these two new realities, compotes, jams, nectars and juices have found a home.

Another good news was the arrival of Fabio, who after years of working as a Chef, decided to change course and joined our team, as well as being one of the teachers at the “Liceo del Gusto” in Borgomanero. Fabio certainly brought a wealth of experience, different from ours, that made possible for us to expand the productive sphere to fruit and vegetables.






I said before that we believe in synergies. In line with this thought we have created two proposals in combination with other local products:

1 - Nebbiolo "Opera 32" from "La Capuccina Wine" with our single origin Equador dark Gianduia and hazelnuts from Romagnano IGP

2 - red Vermouth "VANDALO" with our "Notte" (venezuela and Timut pepper) and our "Sfacciato" bars "(Ecuador and raw sugar).”



"The wonder of synergies is also being able to help the farmers of the territory to eliminate the production’s excess or the unsaleable because it is visually ruined, but still absolutely edible and with a perfect flavor. Pickled vegetables, vegetable cubes and much more. We pack and seal them with their labels and return to the farmers for sale. This closes a circle, eliminates waste and the supply chain is short and healthy. "

And ... they really fell in love, like me, with our territory and the people who make it great. Thank you guys!
